For resistance training, have jets and pull ladders installed that will let you work against your own weight and the water's weight - which is one of the better exercises you can get. Or for endurance training, have training laps coated on or installed with tiles. This is ideal for racers or the ones that simply want to challenge themselves every once in awhile!
One very creative idea for your pool if you are done utilizing it as a genuine pool is to carefully turn it into a fish pond and fill up it with your preferred seafood (koi make particularly good individuals.) Needless to say, make sure you don't actually swim in it, as it'll essentially be a living space and no longer a pool, and fill up it up enough so that there's not a huge drop between your top of the pool and the surface of the water. You can also build a whole garden or patio around it and make your large fish pond the center point of your back garden.
